Premium Estate Grown Green Olives. These are slow fermentation cured Sevillano olives, pitted for your convinience. Perfect for do-it-yourself olive stuffers. These olives are not yet flavored beyond the Sicilian style cure we use.
If you want to do a brine type of flavoring, use 2 oz (1/4 cup) of 5% vinegar, 18 oz (2 and 1/4 cups) of water and 1 tbsp. of salt and your own favorite spices. This recipe yields 2 and 1/2 cups of brine which should fill one bag.
To do an oil presentation, put the olives in a colander to drain any water/brine, or put them in a salad spinner to drain more water/brine. Return olives to bag, add enough olive oil to coat the olives, then add your favorite spices, close the bag and shake to distribute the spices.
If you want to reduce the salinity of the olives before you prepare them, soak them in water to leach out the salt to your taste.
Includes one four pound bag: the bag is reclosable to ensure they stay fresh from the first olive to the very last olive (with refrigeration.) Once opened, the olives should be consumed within two weeks.
